LDMartin1959 on "[Plugin: WP Mail SMTP] Undefined??"

We have the latest version of WP Mail SMTP installed on the latest version of WP. When we replace mail() with wp_mail() as indicate in the FAQ we get the following:

PHP Fatal error: Call to undefined function wp_mail()

What did we do wrong?
